Corn, beans, meat and fish are very important in typical Antioquian (Antioqueña) cuisine. The typical paisa tray or “bandeja paisa”, also known as a typical hillbilly meal or a típico montañero. The original recipe has 15 ingredients.
<li">Buñuelos (Cheese Fritters)
- Buñuelos are round balls of corn-flour dough and cheese deep-fried in oil. They are usually eaten for Christmas.
- Mondogo (Beef Tripe Soup)
- This soup is made using beef tripe, pork and hen meat, and yuca and cilantro.
- Sancocho (Chicken or Hen Soup)
- This soup has chicken or hen meat, and it is cooked with potato and plantain.

The original recipe has 15 ingredients including beans, chorizo sausage, chicharrón (pork rind), a fried egg, avocado, ripe plantain and a corn arepa (a grilled corn-patty).
Mazamorra (Typical Antioquian Hominy)
Mazamorra or hominy is prepared using milk, fresh corn and is served with panela (a chunk of brown sugar) or a piece of (guava paste) bocadillo de guayaba
